HOW TO MAKE EGG AND PLANTAIN MUFFINS

Here’s Another breakfast option to try. This is a great breakfast idea, filled with yummy goodness. This is a complete meal in one and I tell you, you will love it. And for those mothers whose kids don’t love eggs, I recommend this for them. By now, you should have noticed that I have liking abi “loving” for plantains, I mean very Ripe Plantains.
I present to you my Egg /Plantain Muffins.
Ingredients:
2 large ripe plantains
4 eggs
1 onion
4 fresh tomatoes
4 fresh peppers
2 tablespoons of powdered milk
Salt to taste
Aromat seasoning
Knorr powder to taste
Few curry leaves
Vegetable oil to fry plantain
Margarine to grease muffin pans
Method:
Cut plantain into cubes, add salt and fry in vegetable oil
Place fried plantains on Kitchen paper napkins to absorb excess oil
Break eggs into bowl, add Aromat, salt and knorr to taste
Dilute milk in 3 tablespoons of water and add to eggs and mix well
Chop Onions, tomatoes and peppers into cubes
Grease your muffin pan with margarine
Pour the egg mixture into the muffin holes (halfway full)
Distribute the fried plantains into the eggs in the muffin pan
Top each hole with the chopped veggies
Put into oven and bake at 180°C
Half way through, remove from oven and top with chopped curry leaves.
Bake until eggs set and your meal is ready.
Enjoy with a cold beverage.
